Recipe for Lentil Cookies

Have Lentils? Maybe a sweet tooth too? Try these easy to scratch bake cookies that incorporate this local food and pulse crop into a dessert that is sure to turn into a favorite. You'll be ahead of the game in 2016, which has been declared the United Nations Year of the Pulses. We made these in our Community Kitchen during our Grand Opening week and they were a huge hit.

Lentil Cookies

  Ingredients                                                                                          

1 cup mixed lentils                                                                            
1 cup butter                                                                                   
1 egg                                                                                            
1 cup whole wheat flour                                                                       
1 tsp baking soda                                                                      
1 tsp vanilla                                                                                          
1 cup rolled oats
1 cup pecans
1 cup chocolate chips

   Directions

 1. Cook the lentils for 35 minutes. Strain and crush with a fork
 2. Preheat the oven to 375 degrees. Grease a cookie sheet.
3. In a bowl, cream crushed lentils, butter, and brown sugar together. Add the flour, baking soda and vanilla. Stir in oats, pecans, and chocolate chips.
 4. Drop the cookies by the spoonful onto the prepared baking sheet and flatten. Bake cookies for 13 to 18 minutes and allow to cool on a baking rack.
