Here's what Chef Joe had to say about his path to becoming a favorite local chef:
I'm Joe Kubista, owner and chef of Franklin's. Franklin's is a breakfast and lunch diner-style restaurant in downtown Coeur d' Alene, Idaho. I grew up in the industry. Both my grandmothers on my mother and father's side of the family, owned and operated kitchens. When I was a younger child, I would help my mom operate the kitchen of a retirement home. Even helping serve dinner by candlelight after an ice storm! I have a passion for cooking and being creative in the kitchen. I have enjoyed working in restaurants over the last 18 years of many different styles. Some eat to live, I live to eat!
In The Kitchen, Sada has a seat at the table and a full meal that she made herself in front of her. She loves many things about the Community Classes, but her favorite part is the shared meal at the end of class—when everyone sits down to enjoy what they’ve made. “It’s the community. Getting together with everybody. Meeting new people ... Jamie said that the classes have made healthy food more accessible for her. She’s learning how to cook fresh ingredients rather than turning to processed foods. “I didn’t realize food was so simple.
